Preheat the oven to 425°F (220°C).
Pat the chicken dry and season both sides with salt and pepper. Set aside while you make the sauce.
In a large bowl, combine the Dijon mustard, honey, olive oil, garlic, spices and a pinch of salt. Mix.
Add a few pieces of chicken at a time to the sauce and use tongs to coat each one. Transfer to a large lightly oiled cast-iron skillet or baking sheet, scrape any remaining sauce on top and add the onion.
Bake until the chicken is cooked through (165°F / 74°C inside), about 25 to 30 minutes.
