Preheat the oven to 325°F (165°C). Mix or whisk the brown sugar, oil, egg, buttermilk, vanilla, baking soda and flour in that order, stirring until just combined. Fold in the apples.
Pour the batter into a buttered 23 x 33 cm (9 x 13 inch) pan, or line it with parchment paper.
Combine the sugar, cinnamon and melted butter with a fork until evenly dispersed, pressing out any clumps; it will have the texture of damp sand. Sprinkle and crumble it evenly over the cake.
Bake for 45 minutes, testing with a toothpick if needed. Serve with honey butter or whipped cream if you like.
